Rolo Cookies

I received these as part of a cookie exchange this past weekend and have to say they are very  tasty cookies.  Once I stock my cupboard with Rolo's I plan on making a few batches myself.  I thought I would share the recipe here because it's just that good !!

What you will need:



1 cup of sugar
1 cup of brown sugar
2 eggs
1 tsp vanilla
1 cup of butter
3 1/4 cup of flour
3/4 cup of cocoa powder
1 tsp baking soda
8 packages of Rolo's

How you make them:

  • Combine first 5 ingredients in a bowl and then the remaining in a separate bowl.
  • Add dry mixture to wet one - Mixing with hands.  (This will be very messy)
  • Flatten a small amount of cookie dough in your hand and wrap the rolo in the dough making it the center.
  • In a small bowl of white sugar roll the dough and place on a greased cookie sheet, flatten slightly with a fork.  
  • Bake for 8 to 10 minutes at 350 F

    Ohh - I found the recipe (someone mentioned it)! I am going to have to try these, too.
